We announced it a few days ago, autumn is well and truly arrived at the restaurant at Hostellerie de Levernois and map our Chef Philippe Augé gives pride to Burgundy seasonal products.
Among these, we invite you to discover the Black Pearl Burgundy tuber uncinatum, also known as the autumn truffle. Harvested between mid-September and the end of March, succumb to its lighter than its cousin, the black truffle chocolate veined white meat, its scent of undergrowth and nutty flavor.
Start it with a fun and exciting tour of "The House of a Thousand Truffles and Mushrooms", a wooden building devoted exclusively to the Burgundy Truffle, vesseltracker located in the vineyards of the Hautes Côtes de Beaune and sponsored by Susanne Bottigliero!
